Breakfast Burrito

This breakfast burrito recipe is packed with scrambled eggs, cheese, crispy potatoes, and veggies. It’s one of my favorite meal prep breakfasts. These burritos freeze perfectly!

Ingredients

▢1 pound Yukon Gold or yellow potatoes, cut into ¼-inch pieces, or 1 pound frozen diced hash browns, thawed
▢Extra-virgin olive oil, for drizzling
▢½ teaspoon smoked paprika
▢¼ teaspoon garlic powder
▢Sea salt and freshly ground black pepper
▢1 bell pepper, stemmed, seeded, and diced
▢4 green onions, chopped
▢1 garlic clove, chopped
▢2 cups fresh spinach, chopped
▢8 large eggs
▢6 (12-inch) flour tortillas
▢1 heaping cup shredded cheddar or Monterey Jack cheese
▢Salsa, for serving

Instructions

If using fresh potatoes: Preheat the oven to 425°F and line a baking sheet with parchment paper.
Place the potatoes on the baking sheet. Drizzle with olive oil and sprinkle with the smoked paprika, garlic powder, and pinches of salt and pepper. Toss to coat and spread evenly on the baking sheet. Roast for 20 to 25 minutes, or until crisp and browned around the edges.
If using frozen hash browns: Heat a drizzle of olive oil in a large nonstick skillet over medium heat. Add the hash browns in a single layer and cook for 4 to 5 minutes without stirring, or until browned underneath. Add the smoked paprika, garlic powder, and pinches of salt and pepper. Stir to combine, then arrange the potatoes in a single layer again and cook for 4 to 5 minutes, or until well browned. Remove from the pan and set aside.
Return the pan to medium heat and add another drizzle of olive oil. Add the bell pepper, green onions, garlic, and pinches of salt and pepper. Cook, stirring occasionally, for 5 minutes, or until softened. Add the spinach and cook until wilted. Remove from the pan and set aside.

In a medium bowl, whisk the eggs with a pinch of salt and several grinds of pepper. Return the pan to medium-low heat and pour in the eggs. Stir to scramble, cooking until just set. Remove from the pan and set aside.
To assemble the burritos, fill each tortilla with some of the eggs, potatoes, pepper mixture, and cheese. Fold and roll to close.
If enjoying right away, lightly brush a large skillet with olive oil and heat over medium-low heat. Working in batches if necessary, place the burritos in the pan and toast for 2 to 4 minutes per side, or until browned and crisp. Serve with salsa for dipping.
If freezing, wrap tightly in foil and freeze for up to 3 months. To reheat frozen burritos, unwrap the foil and wrap loosely in a paper towel or kitchen towel. Microwave for 3 to 4 minutes, flipping halfway, or until soft and thawed in the middle. Microwave for another 2 to 3 minutes to fully heat the burrito through, or if desired, crisp the tortilla on the stovetop using the method above. (You can also crisp them in an air fryer or toaster oven for 4 to 6 minutes. Flip halfway through.)

Instructions
Heat the oil in a large pot over medium heat. Add the onion, a pinch of salt, and several grinds of pepper and stir. Cook until the onion is translucent, 5 minutes, then add the red pepper. Stir and cook until soft, 5 to 8 minutes, turning down the heat as needed.

Add the garlic, chili powder, and cumin, if using, and stir for 30 seconds, until fragrant.
Add the tomatoes, beans, water, chipotles, adobo sauce, corn, salt, and several grinds of pepper. Cover, reduce the heat to low, and simmer for 25 minutes, stirring occasionally, or until the chili has thickened.
Stir in the lime juice and season to taste. Serve with desired toppings.
Notes
* Chipotle peppers vary in spice level, so if you’re sensitive to spice, start with less. If you love spice, add more to taste. If your chili is too spicy, add more lime juice and a bit of olive oil to tone it down.

▢1 teaspoon smoked paprika
▢½ teaspoon crushed red pepper flakes, more or less to taste
▢¼ teaspoon sea salt
Cabbage and butter beans
▢2 tablespoons olive oil, divided
▢1 small green cabbage (about 1½ pounds or 680g), cored and cut into 1-inch ribbons

▢1 large red bell pepper, thinly sliced
▢1 medium sweet onion, thinly sliced
▢¾ teaspoon sea salt, divided, plus more to taste
▢¼ teaspoon black pepper
▢4 cloves garlic, minced
▢30 ounces canned butter beans, drained and rinsed (2-425g cans)
▢4 cups kale, packed (120g) chopped and tough stems removed
▢3 tablespoons vegan butter
▢½ cup low-sodium vegetable stock (120ml)
▢1 teaspoon apple cider vinegar, plus more to taste
▢2 scallions thinly sliced on the diagonal
▢Crushed red pepper flakes for serving, optional
Instructions
Make the crispy garlic crumbs.
Melt the vegan butter in a large skillet over medium heat. Add the panko and cook for 3 to 4 minutes, stirring frequently, until deeply golden.

Add the garlic and sea salt. Cook for 30 to 60 seconds, stirring constantly, until fragrant. Remove from the heat and stir in the scallions. Transfer the crumbs to a bowl and carefully wipe any loose crumbs from the skillet.
Mix the hot “honey” sauce.
In a small bowl, whisk together the agave, apple cider vinegar, Dijon, hot sauce, smoked paprika, red pepper flakes, and sea salt. Set aside.
Char the cabbage.
Return the skillet to medium-high heat and add 1 tablespoon of the olive oil. Once hot, add half the cabbage and spread it into an even layer. Let it cook undisturbed for 2 to 3 minutes so that some of the edges become deeply browned.
Toss and cook for another 1 to 2 minutes. The cabbage should begin softening but still retain some structure. Transfer it to a plate and repeat with the remaining tablespoon of oil and cabbage.
Cook the peppers and onions.
Reduce the heat to medium. Add the bell pepper, onion, ½ teaspoon of the sea salt, and black pepper to the same skillet. Cook for 4 to 5 minutes, stirring occasionally, until the onion begins to soften and the pepper remains brightly colored.
Build the skillet.

Add the garlic and cook for 30 seconds, stirring constantly. Add the butter beans, kale, remaining ¼ teaspoon sea salt, and vegetable stock. Gently stir and cook for 2 to 3 minutes, just until the kale turns bright green and begins to wilt.
Glaze everything.
Return the cabbage to the skillet. Add the vegan butter and pour in the hot “honey” sauce. Gently toss until the butter melts and everything is evenly coated. Cook for 2 to 4 minutes, stirring occasionally, until the sauce becomes glossy and lightly clings to the cabbage and beans. Avoid cooking it so long that the vegetables lose their color or the beans begin breaking apart.
Finish and serve.
Remove from the heat and stir in the remaining teaspoon of apple cider vinegar. Taste and add more salt, vinegar, hot sauce, or red pepper flakes as desired. Sprinkle generously with the crispy garlic crumbs and sliced scallions just before serving.
